Ingredients
About 2 lbs. of beef tri-tip
1 tablespoon of extra virgin olive oil
2 tablespoons of beef seasoning
1/2 cup sliced red onions
1/2 cup sliced green pepper
1/2 cup sliced red bell pepper
1/2 cup sliced yellow bell pepper
8-12 small flour tortillas
Guacamole
Salsa
Sour Cream
Shredded Cheese
Directions

Tri-Tip Prep

  1. Prepare the grill, heating to 450 degrees Fahrenheit.
  2. Season the tri-tip with 2 tablespoons of beef seasoning.
  3. Grill tri-tip for 5 minutes, until crisp. Flip and grill for an additional 5 minutes. Move to indirect heat for an additional 10-12 minutes. 
  4. Let beef rest for 10 minutes and cut into thin strips. 

Fajitas Prep

  1. Heat a skillet to medium-high heat.
  2. Add a tablespoon of olive oil and then add the peppers and onions. Toss them with 1/2 tsp. of beef seasoning. Stir occasionally for 6-10 minutes. 
  3. Heat your tortillas. 
  4. Load up each tortilla with beef, veggies, and your favorite toppings!
